This Smoked Salmon Salad is an easy and beautiful dish to assemble, tossed with a refreshing lemon-dill dressing. I love the contrasting textures and flavors! You can serve it straight from the package, ripping it into smaller pieces with your fingers as you assemble the salad. When shopping for smoked salmon, I always look for wild-caught Alaskan salmon. Compared to farm-raised fish, wild-caught typically has a better ratio of anti-inflammatory omega-3 fatty acids to omega-6 fats, and it gets its natural dark pink color from the antioxidant astaxanthin.

Instead of boiling the potatoes I smoked them first then tossed them with the usual ingredients plus bacon for the win. Smoked potatoes you say? And this salad fits the bill on both counts. Oh, that was only the beginning of the fun! It was really good with the Parmesan, but I knew it would be better with feta and when I made it again this week, I was so right. Because I recently made this for dinner and not as a side dish, I added some grilled chicken, but you could easily leave that out based on your preferences.
